- 2 raw beetroots, peeled and diced
- 4 spring onions, chopped
- ½ red chilli (medium hot)
- 1 tbsp. fresh mint, chopped
- 1 tbsp. lemon juice
- 3 tbsp. olive oil
- Put all the ingredients into a blender and whizz until they are blended to the desired consistency.
- Will keep in the fridge for a week.
