Beetroot Salsa

Brilliant beetroot is an incredibly nutrient dense vegetable and a unique source of betaine which can help protect cells and strengthen your immune system. These brightly coloured balls of goodness are highly valued for their blood and liver detoxification properties, making this salsa an ideal addition to dinner party nibbles or a perfect snack for the morning after.
Ingredients
Serves 2
- 2 raw beetroots, peeled and diced
- 4 spring onions, chopped
- ½ red chilli (medium hot)
- 1 tbsp. fresh mint, chopped
- 1 tbsp. lemon juice
- 3 tbsp. olive oil
Instructions
- Put all the ingredients into a blender and whizz until they are blended to the desired consistency.
- Will keep in the fridge for a week.
