Broccoli, Avocado, Almond & Mint Soup

LOW CALORIE, GREAT TASTING AND LIGHT MEAL
Ingredients
Serves 3-4
- 500g broccoli, head and stems, chopped into bite-sized pieces
- 70g whole raw almonds
- 2 tbsp coconut oil 1 avocado 3 tbsp lemon balm, chopped
- 3 tbsp fresh mint leaves, chopped
- 1 stem lemongrass, bottom white section only
- 1 clove garlic
- 1 tbsp fresh chives, chopped, plus more for garnish
- 600ml water or homemade vegetable stock
- 1 tbsp fresh lemon juice Dulse flakes, to taste
Instructions
- Steam the broccoli for 5 minutes until soft. Remove from heat and set aside.
- Place the almonds into a small heatproof bowl. Pour just-boiled water into this boil and let sit for 5 minutes. Drain and pop the almonds out of the skins. Discard the skins.
- Blend all the ingredients together until smooth and creamy.
- Can be reheated, or served chilled.
