Cinnamon, Apple And Almond Quinoa Porridge

Ingredients
Makes 2
- 1 cup of quinoa
- 1 apple
- 2 teaspoons of cinnamon
Instructions
- Peel, and core the apple and cut into ½ inch chunks.
- Place in a saucepan and just cover the apple with water, throw in the cinnamon sticks.
- Cover with a lid and stew over a gentle heat for approx 10 minutes or until soft.
- Drain the water and cinnamon and set aside.
- Rinse the quinoa thoroughly and place in a pan.
- Stir the quinoa in a dry pan, stirring with a wooden spoon to dry it, till a nutty aroma comes from it.
- Using the water from the apples, and the cinnamon, cook the quinoa over a gentle heat until the grain swells about 12 minutes, adding more water if needed.
- The quinoa should have about double their volume of water when cooking.
- All the water should evaporate when cooking but if not drain off the excess water, add the cooked apple and pear.
- Serve with a little almond milk.
