This super simple pudding provides a great nutritional punch of fiber and vitamin C as well as being an excellent source of phytonutrients with antioxidant activity. The cinnamon adds warmth to the pudding as well helping to lower bad cholesterol. Nothing says autumn quite like the smell of warm pears and cinnamon!
Ingredients
Serves 4
  • 4 Rocha pears, peeled and cored, stalk left on
  • Water
  • 1 cinnamon stick
Instructions
  1. Peel and core the pears, place them in a saucepan and cover with water.
  2. Add the cinnamon stick, bring to the boil and simmer for about ten minutes or until the pears are soft. It may take a little longer depending on the pears you use.
  3. Remove the pears from the water, stand to cool upright on a wire rack to maintain shape.
  4. Bring the remaining liquid to the boil and reduce by a third or until it becomes syrupy.
  5. Serve the pears with a drizzle of the syrup and a dollop of yogurt or crème fraiche.
