South American Breakfast

Pancake mix
  • 70g buckwheat flour
  • 70g gram flour
  • 1tsp baking powder
  • 6floz or 175mls of cold water
  • 300mls Almond milk
Breakfast Method
  • 1 tbsp coconut oil
  • ¼ red onion
  • 100g white beans rinsed
  • 2tsp coconut oil for greasing
  • 1 pinch of chili powder
  • 1 pinch of ground cumin
  • 1 pinch of Himalayan salt
  • 1 avocado halved peeled stoned and sliced
  • juice of ½ lime
  • t bsp chopped coriander
  • 2 eggs
  • 8 cherry tomatoes or two tomatoes sliced
  1. Gently fry the onion in the coconut oil, and then combine all the ingredients except the avocado egg and lime and warm through.
  2. Make the pancakes by combining all the ingredients in a bowl, make a well in the middle and slowly pour in the almond milk, when combined and without any lumps pour in enough water so that it has the consistency of pouring cream. do not over stir.
  3. Heat a frying pan high and grease with the coconut oil, then ladle in enough batter to make a French pancake. flip the pancake and set aside and keep warm.
  4. Warm up the bean mixture and place on the on top of one of the pancakes, gently fry an egg and also place on the plate, arrange the avocado on top and sprinkle with coriander.
