Moroccan Butter Bean Casserole

A warming and light meal any time of the day. Great if you are feeling like you need some extra immune boosting. The combination of garlic and onion is great for immunity, combined with a good stock and ginger and cumin and you are ninja fighter for bugs. The rest is just simply delicious!
Ingredients
  • ½ an onion
  • nut of coconut oil
  • 1 garlic clove
  • 1 leek
  • 1 parsnip
  • 1 courgette
  • ½ small butternut squash
  • 3 tomoates skinned and roughly chopped
  • 300 gs of cooked butter beans (as per above recipe)
  • 1 litre of best quality vegetable stock.
  • 1 tsp cumin
  • 1 tsp ginger
  • 1 tsp coriander
  • 1 tsp turmeric
  • ½ red chilli seeds removed
  • Samphire for decoration
Instructions
  1. Dice the onion and chilli and crush the garlic.
  2. Peel and remove the seeds from the butternut squash.
  3. Peel the parsnip, peel and roughly chop the tomatoes.
  4. Cut the vegetables into ½ inch cubes.
  5. Set to one side.
  6. Sweat the garlic and the onion with the coconut oil until soft.
  7. Add the rest of the vegetables and continue to sweat for a few minutes, stirring with a wooden spoon.
  8. Add all the spices and mix thoroughly to coat the vegetables.
  9. Add the stock and leave to simmer until the vegetables are tender approx. 10 minutes.
  10. Add the butter beans and continue to simmer for another 5 minutes.
  11. Serve with Rice or Quinoa or a salad of choice.
