Shiitake, Bean & Fennel Soup

Good for the colon because fennel helps digestion and shiitake is good for the immune system 90% of which is in the gut. Onion, thyme and garlic also kill bugs in the gut so this is good for gut health.
Serves 2
  • 2 tbsp coconut oil, melted
  • 2 fennel bulbs, cut into 2 cm segments
  • 2 garlic cloves, skins on
  • 8-10 shiitake mushrooms, thinly sliced
  • 10 drops liquid aminos
  • 2 ribs of celery, roughly chopped
  • 1 tsp fennel seeds
  • 350g ready-to-eat white cannellini beans

  • Fresh thyme to garnish
  • Dulse Flakes, to taste
  1. Preheat oven to 200°C.
  2. Coat a large baking tray with the melted coconut oil.
  3. On one side, add the fennel and garlic cloves, tossing it to coat, on the other side of the tray, add the mushrooms mixed with the liquid aminos, and tossing to coat.
  4. Roast for 20-25 minutes.
  5. Let cool slightly before adding it to a hi-speed blender with the celery, fennel seed, beans and water or stock.
  6. Pop the roasted garlic out of the skins before blending.
  7. Blend until smooth.
  8. Garnish with thyme.
