Broccoli, Avocado, Almond & Mint Soup

LOW CALORIE, GREAT TASTING AND LIGHT MEAL
Ingredients
Serves 3-4
  • 500g broccoli, head and stems, chopped into bite-sized pieces
  • 70g whole raw almonds
  • 2 tbsp coconut oil 1 avocado 3 tbsp lemon balm, chopped
  • 3 tbsp fresh mint leaves, chopped
  • 1 stem lemongrass, bottom white section only
  • 1 clove garlic
  • 1 tbsp fresh chives, chopped, plus more for garnish
  • 600ml water or homemade vegetable stock
  • 1 tbsp fresh lemon juice Dulse flakes, to taste
Instructions
  1. Steam the broccoli for 5 minutes until soft. Remove from heat and set aside.
  2. Place the almonds into a small heatproof bowl. Pour just-boiled water into this boil and let sit for 5 minutes. Drain and pop the almonds out of the skins. Discard the skins.
  3. Blend all the ingredients together until smooth and creamy.
  4. Can be reheated, or served chilled.
