Herb-Crusted Fish

Serves 4
  • 50g ground almonds (almond flour)
  • 1 Tbsp nutritional yeast
  • 10g parsley, dill, and chives, finely chopped
  • 1 Tbsp coconut oil
  • 4 skinless sustainably-caught fish fillets
  • 1 lemon
  • Seasonal fresh vegetables to serve (lettuce, snap peas, cucumber, etc)
  1. In a large shallow dish, combine the almond meal, nutritional yeast, and chopped fresh herbs.
  2. Preheat broiler to "HI".
  3. Melt the coconut oil in a heatproof skillet.
  4. Pan-fry the fillets on one side for 2-3 minutes until tender.
  5. Turn them over and sprinkle the almond meal mixture generously and evenly on top of each fillet.
  6. Place the skillet under the broiler and grill for 2-3 minutes.
  7. Serve with a simple salad and generous squeeze of lemon.
