Banana Cake

A wonderful teatime alternative for those avoiding wheat and dairy or delicious treat for those looking for guilt free indulgence. Packed full of minerals including potassium and fibre, this teatime treat helps to maintain normal blood pressure and heart function. Delicious served warm or cold, it is loaded with energy to keep you going all day.
Makes approx. 12 slices
  • 4 bananas, mashed
  • 4 medium eggs
  • 75 grams nut butter, such as almond or cashew (please see separate recipe *link *)
  • 50g coconut oil, melted
  • 75g ground almonds
  • 25g rice flour
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 50g walnuts or pecans, roughly chopped
  • 1 tsp. vanilla extract
  • A pinch of mineral salt
  1. Preheat the oven to 140ºC fan/ 160ºC conventional / Gas Mark 3.
  2. Line a loaf tin with parchment paper leaving 2 cm above the top of the tin allowing for the bread to rise.
  3. Begin by mashing the bananas into a lumpy paste.
  4. Beat in the eggs, nut butter and coconut oil until everything is well combined and fairly smooth.
  5. Fold in the remaining ingredients and immediately pour the batter into the prepared tin.
  6. Transfer to the oven and bake for 1 hour - 1 hr 15 minutes, until the loaf is golden, well risen, and a skewer inserted into the centre comes out clean.
