As the rain pours down and limbs freeze, there is something comforting in a stew, especially when you need an energy pick me up. Kidney beans are a great source of antioxidant as well as protein and gives the stew a goo meaty taste. It will also help to boost your energy levels and stabilize blood sugar levels. The high volume of thiamin in the beans also aids cognitive function. An all round winner for busy people who have to be on the ball!
Ingredients
1 onion, chopped
1 garlic clove, crushed
Serves 4
1 red pepper, chopped
Pinch chilli flakes
110g mushrooms, chopped
110g tomatoes, chopped
2 x 400g tins red kidney beans, rinsed and drained
1 tsp. dried mixed herbs
225ml vegetable stock
Instructions
Place the onion, garlic, red pepper, chilli and 2 tbsp. water in a large pan.
Cook over a high heat for 3-4 minutes or until soft.
Add the mushrooms, tomatoes, red kidney beans, mixed herbs and vegetable stock.
Bring to the boil and simmer for 3-4 minutes.
