Cinnamon, Apple And Almond Quinoa Porridge

  • 1 cup of quinoa
  • 1 apple
  • 2 teaspoons of cinnamon
  1. Peel, and core the apple and cut into ½ inch chunks.
  2. Place in a saucepan and just cover the apple with water, throw in the cinnamon sticks.
  3. Cover with a lid and stew over a gentle heat for approx 10 minutes or until soft.
  4. Drain the water and cinnamon and set aside.
  5. Rinse the quinoa thoroughly and place in a pan.
  6. Stir the quinoa in a dry pan, stirring with a wooden spoon to dry it, till a nutty aroma comes from it.
  7. Using the water from the apples, and the cinnamon, cook the quinoa over a gentle heat until the grain swells about 12 minutes, adding more water if needed.
  8. The quinoa should have about double their volume of water when cooking.
  9. All the water should evaporate when cooking but if not drain off the excess water, add the cooked apple and pear.
  10. Serve with a little almond milk.
