Hearty Barley and Bean Vegetable Soup

On cold winter days there is nothing better than a warming and healthy soup. Pearl Barley contains good amounts of vitamins B1, B2, B3, B6 and B9 and is high in fibre and can also lower cholesterol. The aromas of the herbs beautifully compliment the flavours of the root vegetables making this a truly nutritious soup.
  • 115g pearl barley
  • Seaweed of your choice - kombu (2 strips) , wakame, (tablespoon), dulse, (tablespoon),
  • 1 tbsp. samphire
  • 1 litre homemade vegetable stock
  • 1 onion, diced
  • 2 garlic cloves, chopped
  • 1 courgette, diced
  • 1 carrot, diced
  • 1 potato, diced
  • 1 sweet potato, diced
  • 1 beetroot, diced
  • 2 large tomatoes, peeled and chopped
  • 1 can (400g) of cannellini beans (undrained)
  • 2 tsps. fresh parsley and coriander, chopped
  • 2 bay leaves
  • ½ tsp. thyme
  1. Put the barley into a small saucepan, cover with cold water and bring to the boil.
  2. Reduce the heat and simmer for approx.
  3. minutes or until soft with a small bite.
  4. Stir from time to time to prevent sticking, and add more water during cooking if needed.
  5. When cooked, drain and rinse under cold water and set aside.
  6. Soak the seaweed in water for 10-15 minutes or see instructions for soaking, before adding to the stock.
  7. Chop the onion and garlic and steam fry in a medium-sized saucepan on a medium heat for 5 minutes or until soft
  8. Dice the courgette, carrot, potato, sweet potato and beetroot into ½ inch cubes.
  9. Peel and roughly chop the tomatoes and add all the veg to the softened onion and stir to combine.
  10. Steam fry for a further 5 to 10 minutes, stirring from time to time.
  11. Add the stock with seaweed, parsley/coriander, bay leaves and thyme, cover and leave on a gentle heat to simmer for approx. 20 minutes.
  12. Remove the bay leaves and seaweed (unless you are using samphire) before eating.
  13. Serve hot with toast or crisp bread.
