A* Toasty Trail Mix

A sugar free, high-energy snack, that will keep you and your family going throughout the day. You can tweak the recipe to your taste (add a handful of raisins or sliced Medjool dates) and then bag it up into individual snack sized portions or sprinkle over porridge and salads.
  • 100g pumpkin seeds
  • 100g sunflower seeds
  • 100g coconut (use fresh, and scrape off slivers and you can grate any leftovers and make coconut rice)
  • Dried fruit, as required
  1. Spread the seeds and coconut in a single layer over the base of a roasting tin.
  2. Place in the oven at 175ºC fan/ 190ºC conventional and toast for about 10 or 15 minutes or until the seeds are golden brown.
  3. Leave on the tray to cool.
  4. Mix in the dried fruit before bagging up or storing in a sealed jar.
