Beetroot Soup

Beetroots are high in antioxidants so this soup will really sort you out when your body is feeling slightly downtrodden. Where to start with the bountiful properties of beetroot! Beetroot has powerful antioxidant properties and contains potassium, magnesium, iron, folic acid as well as vitamins A and B6. It can also help to lower cholesterol and stabilize blood sugar levels. The addition of the creamy almond milk and the flavours of the onion and celery make this a truly sublime soup.
Serves 1
  • 1 onion
  • 3 beetroots
  • 2 sticks celery
  • ¼ tsp. coconut oil
  • ½ tsp. ground cinnamon
  • 1 litre water
  1. Peel the onion and beets and roughly chop.
  2. Wash and roughly chop the celery sticks.
  3. Heat a little coconut oil in a saucepan over a low heat and add the onion and gently steam fry till soft and translucent.
  4. Add the celery and beetroot and continue to steam fry for a further 2-3 minutes before adding the cinnamon.
  5. Cover the vegetables with water and simmer till soft approx. 10 minutes.
  6. Put all ingredients in a liquidizer and blend till smooth.
  7. Serve with a sprinkling of our Toasty Trail Mix and some Walnut Bread to make a hearty lunch or supper.
