Fruity Omelette

Fruity Omelette Packed with antioxidant-rich berries, this is also alkalising and good for the digestion.
Ingredients
Makes 1 pancake
For the pancake
  • 2 eggs
  • Plus 2 egg whites
  • ½ tsp mixed spice
  • 60ml coconut milk
For the filling
  • 2 tsp coconut oil
  • Large handful blueberries
  • 1 small apple, peeled and chopped
Instructions
To make the pancake
  1. Put all the pancake ingredients in a bowl and beat until thoroughly mixed.
  2. Set to one side.
To make the filling
  1. Put a teaspoon of coconut oil into a frying pan and heat, then add the blueberries and chopped apple and cook until soft.
  2. Set to one side, keeping the filling warm.
  3. Put another teaspoon of coconut oil into the frying pan, heat, then pour in the pancake mix.
  4. When the pancake is firm, add the filling and fold over.
  5. Serve immediately, while piping hot.
