Aubergine and Avocado Rolls

These little rolls are perfect for a light lunch, snack or pre dinner nibble and are incredibly easy to make and brimming with nutrients. Carrots are a crunchy powerfood and offer a host of brilliant health benefits including beautiful skin and anti aging properties. Courgettes are rich in antioxidants which help to scavenge and eliminate harmful free radicals from the body which play a key role in the aging process. All in all a pretty good snack or light lunch for those of us trying to stay youthful and healthy.
Makes 4 rolls
  • 1 Avocado, julienned
  • ½ Aubergine
  • ½ carrot sliced into ribbons
  • ½ carrot, julienned
  • 1 red pepper, julienned
  1. Slice the avocado, red pepper and ½ a carrot into matchstick sized pieces.
  2. I would suggest squeezing a little lime juice onto the avocado to prevent it from browning.
  3. Cut the aubergine lengthways into long think slices and then cut the slices into inch long strips to act as the wrap.
  4. Place the aubergine strips under a preheated grill and grill until they turn golden brown and soft to touch, turning over half way through.
  5. Using a mandolin slice the carrot into thin ribbons.
  6. Don’t panic if you don’t have a mandolin, using a vegetable peeler will have the same effect.
  7. Lay a ribbon of carrot on a chopping board and place an aubergine strip on top.
  8. Cluster a selection of your sliced vegetable matchsticks in the middle of the aubergine and carrot and roll up to form a tight roll.
  9. If they do not stay together you can pin it together with a cocktail stick.
  10. Repeat.
  11. Serve with a handful of lettuce and some juicy cherry tomatoes.
