Fennel and artichoke salad

This salad can be a wonderful liver detox when you feel in need of revitalization. Fennel is deliciously crunchy and sweet giving this salad a refreshing tang, as well as being an excellent source of vitamin C. Artichokes are brimming with vitamins and minerals that can help to combat the symptoms of ageing including heart disease, cancer and reduced liver function. Most people’s favourite part of the artichoke is the heart, but the leaves are actually the source of the vast majority of the goodness so try throwing some of those into the salad as well if you have them available.
Ingredients
Serves 3
- 2 fennel bulbs
- Juice of 1 lemon
- 1 small jar of artichokes preserved in oil
- 1 tbsp. freshly parsley, chopped
- 1 garlic clove, sliced
- 2 tbsp. olive oil
Instructions
- To make the dressing, squeeze the lemon into a bowl and add the olive oil.
- Trim the fennel and remove any outer leaves.
- With a sharp knife cut the fennel bulb in half, then cut long think slices of the fennel, leaving out the middle hard core (if you have a mandolin this is even better).
- Place the sliced fennel in the bowl with the lemon juice and olive oil dressing.
- Remove the artichokes from the oil and drain as thoroughly as you can and thinly slice.
- It will be thicker than the fennel but this does not matter as it is softer and the sizes and textures complement each other perfectly.
- Slice the garlic clove into thin slithers and finely chop the parsley.
- Mix all ingredients together, serve and enjoy!
