Fruity Omelette

Fruity Omelette Packed with antioxidant-rich berries, this is also alkalising and good for the digestion.
Ingredients
Makes 1 pancake
For the pancake
- 2 eggs
- Plus 2 egg whites
- ½ tsp mixed spice
- 60ml coconut milk
For the filling
- 2 tsp coconut oil
- Large handful blueberries
- 1 small apple, peeled and chopped
Instructions
To make the pancake
- Put all the pancake ingredients in a bowl and beat until thoroughly mixed.
- Set to one side.
To make the filling
- Put a teaspoon of coconut oil into a frying pan and heat, then add the blueberries and chopped apple and cook until soft.
- Set to one side, keeping the filling warm.
- Put another teaspoon of coconut oil into the frying pan, heat, then pour in the pancake mix.
- When the pancake is firm, add the filling and fold over.
- Serve immediately, while piping hot.
