In North Africa, this all-round youthing chilli sauce is traditionally used to flavor rice, couscous and stews. Chilli peppers contain capsaicin, which gives them their distinct spicy flavor and also acts as a youthing anti-inflammatory agent. It is delicious in soups, salads, on baked potatoes or served as a dip with our walnut bread.
Ingredients
Makes around 2 tbsp.
- 4 red chillis, deseeded
- 2 garlic cloves
- 1 tsp. dried coriander
- 1 tsp. dried cumin
- 6 tbsp. olive oil
Instructions
- Finely chop the chilli and garlic.
- Place everything in a blender and whizz to a smooth paste (or mash in a pestle and mortar).
- Will keep for a week in the fridge.
