Herb-Crusted Fish

Ingredients
Serves 4
- 50g ground almonds (almond flour)
- 1 Tbsp nutritional yeast
- 10g parsley, dill, and chives, finely chopped
- 1 Tbsp coconut oil
- 4 skinless sustainably-caught fish fillets
- 1 lemon
- Seasonal fresh vegetables to serve (lettuce, snap peas, cucumber, etc)
Instructions
- In a large shallow dish, combine the almond meal, nutritional yeast, and chopped fresh herbs.
- Preheat broiler to "HI".
- Melt the coconut oil in a heatproof skillet.
- Pan-fry the fillets on one side for 2-3 minutes until tender.
- Turn them over and sprinkle the almond meal mixture generously and evenly on top of each fillet.
- Place the skillet under the broiler and grill for 2-3 minutes.
- Serve with a simple salad and generous squeeze of lemon.
