Struggling to get the kids to eat their 5 a-day? Well, we think this Knickerbocker Glory may help. It’s hard to believe that such a sublime and seemingly indulgent treat is actually good for you, with an abundance of vitamin C from the berries and kiwi. Combined with the alkalizing affect of the coconut and dates, it is an ideal pudding to alleviate the symptoms of aging and also pack your kids full of goodness to help them grow. Perfect for a dinner party or a mid-week pudding for the kids.
Ingredients
Serves 1
STRAWBERRY COULIS
  • ½ punnet strawberries
  • Squeeze of lemon juice
COCONUT CASHEW CREAM
  • 170g unsalted cashew nuts
  • 125ml coconut milk
  • 3 dates
GLORY
  • 1 Kiwi
  • Handful blueberries or blackberries
  • Handful raspberries
  • X Beanie Brownies (see separate recipe)
  • Please can you confirm quantities? And also if it is the beanie brownie or another one as it was not specified.
Instructions
Making the Coulis
  1. Put the strawberries in a liquidizer or Magimix with the lemon juice and blend until liquid. Scrape the coulis into a bowl. Set aside.
Making the Glory
  1. Peel and slice the kiwis
  2. Wash the blueberries/ blackberries and pat dry with kitchen paper.
To assemble the knickerbocker glory you will need a tall, cocktail glass.
  1. Start with the strawberry coulis. Pour approx. 3 tbsp. into the bottom of the glass (be careful not to touch the side of the glass as we want to see tidy, clean layers).
  2. Top, wash and slice the strawberries into thin layers. Place carefully on top of the coulis.
  3. Cut the brownies into small rounds with a biscuit cutter. The size will depend on your glass and place gently onto of the strawberries, pressing down to make a compact layer.
  4. Place a dollop of cashew cream on top of the brownie, topped with the fresh kiwis and berries.
  5. Add another layer of cashew cream and top the Glory with the sliced strawberries.
  6. You can be inventive and alternate the layers to suit your taste.
