500g watermelon
1 avocado
2 peaches
handful of yellow cherry tomatoes
fresh mint
Balsamic reduction*
Dice all the fruits into small pieces and arrange on a plate. Scatter with fresh mint leaves and drizzle with the balsamic reduction.
*To make the balsamic reduction, heat 3 Tbsp of balsamic vinegar in a small pan. On medium high heat, bring the vinegar to a boil, then reduce the heat to low and simmer for 10 minutes until it as thickened and reduced down. Test to see if it coats the back of a spoon. It will thicken more as it cools.
