INGREDIENTS:
100g sweet potato, roasted or steamed
100g chickpea flour
1 tsp paprika
1 tsp cumin
120ml just-boiled water
1/4 onion or celery, finely chopped
50g kale or spinach, finely chopped
METHOD:
– Preheat the oven to 200°C.
In a large bowl, mash the sweet potato with the chickpea flour and spices. – Add the hot water, stirring to combine well. Mix in the onion and celery. – Let the mixture rest for 20 minutes before forming into patties. – Place onto a baking sheet lined with parchment paper and bake for 20-30 minutes until crispy, turning them over once during baking. – Let cool completely before storing or packing into lunchboxes. .
