Watercress Salad
(Serves 2)
1 bunch watercress
1 cucumber, sliced
2 blood oranges
2 Tbsp olive oil
1 Tbsp apple cider vinegar
1 clove garlic, minced
Freshly grated black pepper
- Place the watercress into a serving bowl with the cucumber slices.
- Peel and slice one of the oranges to add to the salad.
- Juice the second orange into a small bowl. Add the remaining ingredients and whisk with a fork until it is emulsified. Dress when serving.
